Spring onion cheese paratha is a mouthwatering Indian flatbread that features a delightful stuffing of aromatic spring onions and savory grated cheese. To prepare, the dough is skillfully rolled into a small circle, and a spoonful of the spring onion and cheese mixture is carefully placed in the center. The dough is then delicately gathered around the filling and rolled out into a larger, thinner circle using a rolling pin. The paratha is expertly cooked on a hot griddle or tawa until it reaches a beautiful golden brown hue and an irresistible crispy texture on both sides, with a touch of oil or ghee aiding the cooking process.

The piping hot paratha is then served, often accompanied by a dollop of cooling yogurt or a side of tangy chutney, making it a delightful culinary experience for all. Here is the recipe:                                           

Ingredients:

For the dough:

  • Wheat flour  2 cups
  • Salt to taste
  • Water to knead the dough
  • Oil  3 tbsp

For the stuffing:

  • Spring Onion 1 bunch finely chopped
  • Green chilli 1 finely chopped. 
  • Ginger Garlic paste 1/2 tsp
  • Grated Cheese 1 cup ( I used texmex cheese, a combination of cheddar, mozzeralla and regular cheese)
  • Salt to taste
  • Fresh coriander 2 tbsp finely chopped
  • Kashmiri chilli powder 1/2 tsp
  • Dhania Jeera powder 1/2 tsp
  • Garam masala 1 tsp

Method:

In a bowl, add the wheat flour, salt and mix well. Add water and knead the dough. Coat it with oil and knead again for 3-4 mins to form a stiff dough. Cover and rest it for about 10 mins.

For the stuffing:

Take another bowl. Add spring oinions, green chilies, coriander, grated cheese, ginger garlic paste dry masalas. Mix well and keep aside.

Coming back to the dough, knead well again and divide the dough into equal parts. Roll into puri shape and fill the stuffing.                                          

Seal and roll into round thick paratha.  Heat the tawa and cook in a medium heat. Add oil or butter of your choice. Cook both the sides.

The paratha will puff a bit. Careful while flipping as it is very soft. Paratha is ready to serve

Enjoy hot paratha with curd and pickle.
