Zucchini moong dal kootu is a delightful South Indian dish that brings together the goodness of protein-packed yellow lentils, the mild and delicate flavor of zucchini, the tanginess of tomato, and a blend of rich, creamy fresh coconut, spicy green chilies, and aromatic cumin paste.
This harmonious combination creates a comforting and flavorful dish that’s perfect for a satisfying and wholesome lunch or dinner. The dish pairs wonderfully with both steamed rice and soft, fluffy roti, making it a versatile and nourishing addition to any meal.
Ingredients:
- Moong dal 1 small cup
- Zucchini 1 full chopped into small cubes
- Tomato 1 chopped
- Turmeric 1/2 tsp
- Sambar pdr 1/2 tsp
- Fresh grated coconut handfist full
- Jeera 1/2 tsp
- Rice pdr 1tbsp
- Green Chilli 1( according your spice level)
- Salt to taste
- Curry leaves 1 sprig
- Urad dal 1tsp
- Mustard seeds 1tsp
- Coconut oil 1tbsp
- Whole dry red chilli 1
- Asafoetida a generous sprinkle
Method:
- Wash the moong dal. In an open pot/pan add water, dal, chopped zucchini, and tomato. Add turmeric and sambar powder to it. Cook it until dal and zucchini get combined and mashy.
- Grind coconut, jeera, green chili, and rice pdr smooth paste. Add water while grinding.
- Now add the ground paste to the cooked zucchini dal. Add salt and let it boil for 5 to 7 mins. Add water to adjust the consistency (if needed)
For the tampering:-
Heat coconut oil in a pan. Throw the mustard seeds. Allow it to crackle. Add urad dal, curry leaves, dry red chili, and asafoetida.
Tamper it.
Delicious healthy and nutritious Zucchini moong dal Kootu is ready to serve.
Pairs well with chapati and rice.
